Sourdough Loaf - Gluten Free

Finally, a gluten-free sourdough bread! Our levain is lovingly fed every week to create the wonderful sourdough taste you know and love. Delicious toasted and served with olive oil and herbs, this is the perfect bread to bring to your next gathering! Each loaf is roughly 8"x7" and weighs around 30oz.USA / Indiana / Marion County

Water, wild yeast starter (sorghum and brown rice flour*), sorghum flour, oat flour*, millet flour, brown rice flour*, tapioca flour, arrowroot powder, psyllium powder, flax meal*, sea salt. (*)Denotes organic ingredient.

Q: What size and weight ?

A: Each loaf is roughly 8"x7" and weighs about 30oz.

Q: Can you freeze the bread or keep it in the fridge to last longer?

A: All of our breads freeze very well! We recommend that you slice them before freezing them so you can easily pull off slices as you need them. Our loaves will keep in your freezer for at least 3 months. Many of our customers tell us they refrigerate their loaves successfully for about 2-3 week.

Q: Do you use separate cooking utensils and pans between gluten free and products containing regular flour?

A: We currently rent a kitchen where wheat flour is present so we make sure to wipe everything down and we only use clean equipment and utensils. We only produce gluten-free products so we don't need to use separate utensils and pans between our four different varieties after we've made sure everything is clean and ready to go! Q: Is any oat used?

A: Hello! Yes, we use oat flour in our sourdough loaves. If you are looking for an oat free option then I would recommend giving our seeded boule a try. They are oat free!

Q: could you, would you, make this bread with chia rather than flax? There are so few breads I can eat, with a host of food sensitivities - most have potato starch, which is out for me. But this! If you can't wholesale, is there anyway you could make some for me at an appropriate cost for your efforts? I would pick up, of course.

A: Hi! I have spent many months developing the recipes we have and I have never experimented with chia. I am sorry but I just don't have the time to test it out at this time. I hope you are able to find something that works for you! Best of luck to you!

Q: My mother in law can not have any cross contamination. Is this bread100% gluten free?

A: We do not currently bake in a certified GF kitchen. However, when we are there baking it is just us so the potential for cross contamination is very low. We wipe down all equipment and do what we can to limit that as much as possible. Thank you for asking!
